- pork tendeloin, sliced
- bacon
- rosemary
- oregano
- black pepper
- slice tenderloin about 1 inch thick
- wrape with slice of bacon, use bamboo stick to hold on
- mortar and pestle fresh rosemary, oregano, and black pepper
- paste top and bottom of loin slices with herbs
- pan fry
Serve with green beans and irce.

- chicken thigh
- chipotle pepper in adobo sauce (embasa, 2 pc)
- soy sauce
- oregano
- dried red chili powder
- cocoa
- honey
- black pepper
- salt
- green beans
- polenta
- lettuce (no dressing)
- slice chicken in thin strips
- marinate in sauce of everything but beans and polenta
- stir fry chicken
- add green beans
Serve with polenta and lettuce

- shrimp (10 pieces, 15-20)
- garlic, lots (6 cloves)
- hot sauce
- salt
- pepper
- oil
- white white (Chardonnay)
- oil, salt, pepper
- heat shrimp few minutes, flip over
- add garlic, hot sauce on top
- stir, flip garlic, add wine
- cook for just a few minutes
Service with stir-fried mustard cabbage (with white pepper, ground ginger).

- Sweet Onion
- Red Pepper
- Green Pepper
- Beef
- Spaghetti Sauce (Newmans)
- Bacon
- Chili Flakes
- Olive Oil
- Red, Black, White Pepper
- Salt
- Dried Basil
- add onion to stick pan, cook till caramelization begins, stir occasionally
- add beef
- add bacon
- add red and green peppers
- add spaghetti sauce (half a big jar)
- add all the spices
Serve with spaghetti
Results: One onion per two peppers is not enough onions, too much pepper, but sauce is nice and thick.

- cook the beans
- add bacon and garlic
- add chicken stock

- mix cornstarch with water, just enough to coat vegetables
served with pan cooked salmon

- Salmon fillet (small piece 0.2 lb ok)
- Coconut Milk
- Honey
- Chili Flakes
- Chili Oil
- Black Pepper
- Ponzu
- Cooking Oil
- Make marinade out of coconut milk, honey, chili flakes, chili oil, black pepper and ponzu
- Place salmon in sauce (5 minutes seemed enough)
- Cook salmon in pan with half marinade on top, about 8 minutes total
- Place salmon on tray, add second half marinade and run under broiler (1 in) at high heat (500F) for about 4 min
served Friday with fries and stir-fried bok-choy, red bell with oyster sauce.

- Ground Pork (lb)
- Plenty of Garlic (8 cloves)
- Chipotle Peppers in Adobo sauce (3, Embasa)
- Cilantro
- Chicken Stock
- Oil
- Chili Flakes
- Ketchup
- White Pepper
- Chop Garlic and Peppers, mix with chili flakes, black pepper, ketchup and oil to form paste.
- Cook pork with some oil (in a non-stick pan). It may stick.
- Add garlic, then chicken stock.
- Add paste
- While cooking, chop cilantro into smaller bits
- When pork looks good, add cilantro, mix in, then turn off heat
Served Thursday with rice and stir-fried zucchini and carrot strips.

Went for light dinner on Friday night at our local bistro. I didn’t feel like anything heavy, so besides the summer roll I ordered a salad consisting of
- Pears (I think they were Asian pears)
- Crumbled Gorgonzola Cheese
- Pecans
- Loose Leaf Salad
- Vinaigrette
Quite an interesting mix. You get sweet, salty, fatty, sour all in one dish. You also get to experience soft, crispy, crunchy, leafy, juicy all together. But somehow it didn’t all come together, because there was too much vinaigrette - too much salad dressing - to be able to taste the individual contributors. Much of the time it was just juicy and sour (and that vinaigrette WAS heavy on the vinegar).
But there’s hope. I might try that at home sometime.

- 1 cup flour
- 1 pinch salt
- 4 egg yolk, 4 egg white
- 1/4 cup sugar
- 1 cup milk
- beat egg white to stiff, place in separate bowl
- add flour, salt, yolks, sugar, milk, whisk to smooth consistency
- add yellow on top of white, fold to smooth consistency, don’t deflate the whites
- cook in pan with oil on medium (5), flip, then shred
Makes 2 Schmarrn.
